Herb crusted tuna with lemon drill orzo pilaf


(Lookin' GOOD aye, matey- mate? :P)
I can't believe I'm saying this.. but I'm learning how to cook already. And not just any oh-so-simple dishes.. I'm talkin' about the Escense of Cooking. I figured that if I stay home.. I would sooner or later have to find my way around the kitchen instead of eating out all the time. So yeah, here's a dish that I'm currently experimenting on. It does have slight burnt parts but hey, at least it is EDIBLE!!

Incase you guys are interested, I'll be writing down the ingredients here:
For the tuna
Ingredients
250 grams Tuna
To taste Salt, pepper, lemon juice, olive oil
Procedure
1. Get fresh sushi quality tuna.
2. Season to taste with salt, olive oil, pepper, lemon or lime.
For the crust
Ingredients
1 tbsp. Salt
1 tbsp. Cracked black pepper
1 tbsp. Sesame seeds
1 tbsp. Black mustard seeds
1 tbsp. Chopped garlic
1 tsp. Cilantro seeds
1 pc. Egg white, slightly beaten
Procedure
1. Mix all ingredients except egg white.
2. Brush tuna with egg white.
3. Press it into the spices.
4. Brush the tuna again with white egg white.
5. Saute tuna in olive oil, ona and a half minutes on each side.
For the orzo
Ingredients
80 grams Orzo
2 tbsp. Butter
1 tbsp. Chopped onion
1/2 tsp. Chopped garlic
1/4 cup White wine
1 pinch Saffron (optional)
1/4 cup Chicken stock
1/4 cup Heavy cream
2 tbsp. Chopped dill
2 tsp. Lemon juice
To Taste Salt and pepper
Procedure
1. Boil orzo in salted water with oil until al dente.
2. Sweat onion and garlic in butter.
3. Add saffron to white wine and add to the pan.
4. Add orzo and stir thoroughly. Moisten orzo with cream and stock.
5. Add chopped dill and lemon juice.
6. Season to taste with salt and pepper.
Wasabe Aioli
Ingredients
1 tbsp. Wasabe
2 tbsp. Port wine
1/2 cup Mayonnaise
1 tsp. Garlic
1 tsp. Lemon juice
Procedure
1. Hydrate wasabe with port wine.
2. Mix all ingredients together.
3. Season to taste with salt and pepper.
Final touches:(if you wanna add 'em up just so the meal is complete)
Garnish
Lemon wheel
Sprig dill
Steamed brocolli; and
Rice (?) [for me the meal is NEVER complete without it.. hee]

heyyy.. wohoo seems delicious. i dun really noe how it taste like cos u added port wine in it ryte..hehs gewd job karenn. :D
